SWEET & HOT PORK CHOPS       Chef Johnny

Yield:  20 servings

20 Center Cut Pork Chops

Chef Johnny’s Smoky Spicy Sweet & Hot

7 ½ Cups          Fresh peaches, diced

1 ¼ Cup          Pickled ginger, chopped

½ Cup          Cilantro, fresh, chopped

¾ Cup          Sugar

3T               Brownwood Farms Cherry Hot Sauce

Rub SSS&H on both sides of all the pork chops and sit aside while preparing the peach mixture.

In a large glass-mixing bowl, combine the diced peaches, ginger, cilantro, sugar and Cherry Hot Sauce.  Allow to sit out at room temperature for 30 minutes.  Stir occasionally to help dissolve the sugar and completely combine the ingredients.

Grill the pork chops over medium heat.  Cook to desired degree of doneness.  Serve with choice of potato or rice and top chops with the Sweet & Hot Peach Conserve.
