2 cups flour
2 tablespoons sugar
2 eggs-unbeaten
1/2 tsps salt
2 cups buttermilk
2 T vegetable oil
2 to 3 mashed bananas
1 tsp Chef Johnny's Maple Walnut Seasoning
1 pear, peeled, cored and
small diced
2/3 cups of wheat germ
In
a large mixing bowl, combine dry ingredients.
Add eggs one at a time. Add buttermilk, oil, bananas and pear pieces and
combine. Do not over mix. Preheat a
griddle to medium-high heat. Spray
griddle with vegetable pan release and using a large kitchen spoon, add batter
in pancake portions. Cook until
bubbles appear and bottom becomes golden brown.
Carefully turn over and cook until golden brown.
Serve with warm maple syrup.
