2 tablespoons butter
2 eggs, slightly beaten
1/4-cup cornmeal
2 tablespoons cracked wheat
1/4 cup all purpose flour
1/4-teaspoon salt

Pour over the whole wheat bread crumbs and let soak for 5 min. Add the remaining ingredients then slowly add the milk mixing until well combined. Prepare the griddle by spraying with vegetable oil.  Using a tablespoon, drop the batter onto the hot griddle.  Cook until brown on both sides and serve.
