The
age of the egg affects how easy or how hard it is to peel. Fresher
eggs are harder to peel than older eggs because the albumen (egg white) is
higher in acid. This causes the egg to stick more tightly to the
shell. After a few days, the acid level decreases and the egg white
loosens from the shell making it easier to peel. Pick eggs that are 7 to
10 days old. Check the date stamp on the carton to find the age. |
