DIETARY FIBER--POTATO VS SWEET POTATO

A:  There has been much talk about the fiber benefits of sweet potatoes vs. that of a white potato.   According to the USDA, an average sized white potato peeled and boiled has about 2 grams of dietary fiber.   An average sweet potato peeled and boiled has an average of 5 grams of dietary fiber.   There are many different way to add sweet potatoes to our diet besides the traditional boiling or baking.   I have many recipes using sweet potatoes and hope to add some of them soon to the web site.
