Thanksgiving and Christmas Dressing

Louise wrote me this nice little note. I thought I'd share it with all of you.

"Since your boss, Chef Johnny, sent me a great recipe for a Jack-O-Lantern, Baked with Treats, I would like to send you one. A friend gave me this years ago, and I have used it for years."  Louise

1 Green Pepper (chopped)
6 Stalks Celery (chopped)
2 Large Onions (chopped)
1 Cup Butter
1 Pkg. Jimmy Dean Pork Sausage (mild or hot)
16 Slices White Bread (put in food processor to get bread crumbs)
1 Martha White Cornbread Mix (cook and crumble)
2 t. Sage
1 t. Thyme
1 t. Poultry Seasoning
1 t. Salt
1 t. Pepper
1/2 C. Chopped Parsley
2 Eggs

Preheat oven to 325 degrees. Sauté' onions, pepper and celery in butter until tender but not brown. In another pan, cook sausage until well browned. With breads, add dry ingredients, pepper, celery, onions and sausage (along with drippings). Then add eggs and broth and mix well. Should be "mushy". Spray 9 x 13 pan with PAM (original) and pour mixture in. Bake at 325 degrees for about an hour. If you like oysters, put in one small can.

This is the best dressing I have ever eaten. Enjoy!
