Holiday Soup

1 med. onion diced med to fine
1/4 cup good olive oil
3 cups diced lamb with small amounts of fat included
2 roma tomatoes diced small
1 6 oz can of tomato paste
2 tsp. salt
1 tsp. pepper (White)
1 tsp. of turmeric
1/2 tsp. of red pepper as you like
1 large bunch of Italian parsley chopped fine
1/4 cup of wheat shaped pasta
2 tsp. of fresh or packaged crushed mint
3 1/2 cups hot water

In a 5qt kettle add oil and onions to pan and lightly brown onions. Then add meat and stir till all the pink is gone add dry spices and tomato paste, diced tomatoes and stir till paste is well blended. Pour in water and mix well cover and cook over med. high heat for 45 min. You may have to add more water but do so 1 cup at a time after checking every 15 min or so, as it will cook down a little. When meat is tender, add parsley and pasta and cook 15 more min or till pasta is tender. When it is all done cooking and the pasta is tender add your mint and shut off on the stove. Stir well and let sit 15 min and serve. Serve with a loaf of French bread.
