Almond Duchess Cookies
1 cup butter (no substitutes) at room temperature
Blend butter, sugar and yolks using wooden spoon, mix until they are well
mixed. Add orange rind and pinch of salt. mix in flour and work with
hands
until everything is well incorporated. You should get a "satin" dough.
Roll on lightly floured surface and cut circles, about 2 inch diameter.
Place on cookie sheet.
Beat egg white until it becomes stiff and add powdered sugar and flour and
mix well. Peel and chop almonds.
"Frost" each cookie with meringue and put some chopped almonds on top.
Bake in 350 degree F oven until they are lightly browned (they should not
be over baked).
When cold, keep in plastic or glass containers. These keep
very well. They take some time, but are really worth it.

2/3 cup chopped peeled almonds
1 egg white
1 T powdered sugar
1 T flour
