Southwest Chicken

Ingredients:

• 4   6oz Boneless-Skinless Chicken Breasts
• Spray Olive or vegetable oil, garlic flavored

• Southwest Santa Fe

Instructions:

Wrap the chicken breast in heavy food plastic wrap or put into a plastic food bag.  Lightly pound with smooth mallet to about 1/2 in thick.  Rub Southwest Santa Fe seasoning on both sides.  Spray with the oil and pan fry in heavy duty skillet over medium heat or place on backing sheet and put into a 350 degree oven until done.  Serve with Spanish rice and vegetable or with black beans.
